Easy and quick Enchiladas for the low-carb healthy people out there that do not want to trade health for FLAVOR.

Ingredients
1 (15-ounce) can of tomato sauce
1 Tablespoon chili powder
1 Teaspoon minced garlic
Pinch of sea salt
Pinch of ground cinnamon
1 1/2 tablespoon chili powder
2 1/4 teaspoons dried minced onion
1 1/4 teaspoon garlic powder
1 1/4 ground cumin
1 pinch sea salt
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne
4 6-inch tortillas (corn or flour)
1 pound ground beef
1 Medium onion
2 cups cooked black beans
1 large avocado sliced
1 Roma tomato diced
6 oz black olives sliced (optional)

Directions
Mix the enchilada sauce together by combining the tomato sauce, chili powder, cumin, minced garlic, oregano, and cinnamon. In a medium bowl, whisk together the sauce ingredients.
Saute ground beef seasoned with taco seasoning ingredients & 1 med onion. Cook until browned. Feel free to use taco seasoning of choice as a replacement equaling to 1/4 cup.
Using a 9" wide by 4" deep cake pan that can fit in your
Instapot/pressure cooker, begin layering the ingredients. Spread a thin layer of enchilada sauce, then add a tortilla, some of the beef, some of the black beans and some avocado slices. Repeat the layers three more times. Garnish the top with avocados.
Cover with foil.
Put 1 cup of water in the Instapot/pressure cooker and place the trivet in the cooker. Easy Pan Removal Method: Cut out a piece of foil 18 inches long and set pan in the middle.
Fold ends of foil over the pan and use the foil as a hammock to lower into the Instapot/pressure cooker. Lower into the Instapot/pressure cooker.
Place the lid on the cooker and make sure the pressure knob is in the SEALING position. Select the HIGH PRESSURE function and use the +/- keys to set time to 10 minutes
When the cooker beeps to let you know it's finished, switch the pressure knob from the SEALING position to the VENTING position. Use the the quick release venting but be careful and use caution. The steam escaping is VERY HOT.
Optional: To crisp top, remove foil and place the dish under the broiler for 5-7 minutes.
Serve topped with diced tomatoes and the remaining Avocados.
Recipe Note
Add green onions and/or cilantro to the top of the Enchiladas for extra flavor and color if wanted.
