Add diced onion and cook about 7-10 minutes, until they start to look clear.
Add ground beef to the onions and cook until the ground beef is browned.
While the ground beef is cooking, you can add in the seasonings to the tomato sauce for the enchilada sauce. Mix together so it is all blended together
Once the ground beef is browned, start layering your enchiladas! Start with enough sauce to thoroughly cover the bottom of the pan.
Place 1 tortilla on the bottom, next is some black beans, sliced olives, dices tomatoes, and sliced avocados.
Spoon a couple of large spoonfuls of enchilada sauce over the the meat and other toppings and add a little shredded cheese.
Repeat these steps 3 more times.
On the last layer, shred about 1 cup of cheese and top with black olives.
Place in 350 degree oven and bake about 25 minutes, just long enough to make the cheese nice and gooey melted!
For the last 5 minutes, turn the broiler on and brown the cheese to a beautiful golden brown!
Remove your layered enchiladas from the oven and let rest about 5ish minutes before cutting into them.
Serve with sour cream, salsa, shredded lettuce, diced tomatoes and onions, sliced avocado and black olives.
